Electrolysis never occurs unless a salt is added. Total dissolved solids TDS must be present for a current to flow.

Instead lungs are rehydrating the RBCs as they pass through the alveoli capillary beds.
The red light monitoring is reading hydration not oxygen levels. By noticing the reflected light from the RBCs.
Dehydrated RBCs are dark
Hydrated RBCs are light/bright
The ubiquitous and miraculous saline drip is also rehydrating RBCs.
RBCs are carrying salt water. They absorb and discharge salt water where it is needed.
